Chocolate Covered Bananas
These double for decadant snacks and go-to desserts that everyone loves!

Ingredients
Instructions
  1. After peeling the bananas cut each one in half crosswise. Into the cut end, insert a pop cycle stick into each half from the cut end. Place the bananas on a tray. Cover with plastic wrap and place the tray into the freezer for about 3 hours until the bananas are frozen.
  2. Place the peanuts on a plate. Cover a tray with wax paper.
  3. In a double boiler, make sure the water is not touching the bottom of the top pan. Bring the water just to a simmer. Melt the chocolate in the top of a double boiler stirring frequently. Pour the melted chocolate into a tall slender glass.
  4. Dip each frozen banana into the glass with the melted chocolate. Turn the banana as needed to coat it. Immediately roll in the peanuts.
  5. Place on the tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze in a sealable freezer-grade plastic bag for up to 2 weeks.

I’m thrilled to invite you to the Villanova University College of Nursing’s MacDonald Center for Obesity Prevention and Education (COPE) fall cooking workshop: The Taste of the Holidays!!  As the chef instructor for this course, I’ll be working with renown chef Adam Glickman – the Chef at The Inn at Villanova University, to show you award-winning recipes perfect for a sensationally healthy holiday season.

Registration is now open for the November 14th (Tuesday) evening program.  There are only 20 spaces available, one of which can be yours!  Spouses, children, friends are all welcome to register along with you; cost is $65 per person which will include sit-down fine-tastings with wine plus a take-home gift (see below).

Apple Mimosa
Instructions
  1. In a small saucepan, simmer apple cider until it is reduced to a fourth of its original quantity. It will get thick like syrup. Allow to cool and chill. Lightly rub the rim of each champagne glass with butter, just enough to grease. Dip the greased rim into brown sugar. Add 2 tablespoons of the chilled apple cider syrup and fill the glass ¾ full with champagne. Garnish with an apple slice. Enjoy!

Apple Stuffing for Chicken, Pork or a Great Fall Side

Ingredients

  1. Preheat oven to 355ºF. Lightly grease a 13 by 9 by 2-inch baking dish. In a small bowl, combine chicken broth and cranberries. Let soak for 30 minutes. In a large skillet, melt butter over medium heat. Cook the onion and celery for 5 minutes stirring frequently until tender. Add apples and cook for 5 minutes, stirring frequently. Remove from heat and place in a large bowl. And, add pecans. In a small mixing bowl, beat eggs. Add milk, zest, thyme, cinnamon, salt and pepper. Set aside. In the large bowl with vegetables, stir in chicken broth and cranberry mixture, Add toasted bread, stirring gently to combine. Whisking just before adding, add the egg mixture into the large bowl. Spoon mixture into prepared dish and bake for 30 to 40 minutes or until center is set.
